Avocado Toast with Egg
A trendier breakfast, or even a brunch, will be the combo of avocado and egg on top, smashed on toasted bread. It sounds much healthier and finer, with really great balance-a delicious bundle full of healthy fats, protein, and fiber.
Avocado Toast with Egg Recipe:
Ingredients:
- 1 ripe avocado
- 2 slices of bread (whole grain or of your choice)
- 2 eggs (fried, poached, or scrambled)
- Salt and pepper to taste
- Red pepper flakes (optional)
- Lemon juice (optional)
- Olive oil (optional)
- Fresh herbs like parsley or cilantro (optional)
Instructions:
- Toast the Bread: Begin with toasting your slices of bread either in a toaster or on a skillet until golden and crispy.
- Avocado Preparation: Cut the avocado in half and remove the pit. Scoop the flesh into a bowl and mash it with a fork. Sprinkle a pinch of salt, pepper, and a squeeze of lemon juice for added flavor. You can add olive oil for creaminess if you like.
- Cooking the Egg: Put a little oil or butter in a pan. Crack the eggs into the pan and cook to your liking: fried, scrambled, or poached. Season with salt and pepper.
- Assemble the Toast: Slather the mashed avocado thickly on the toasted bread. Put the cooked egg atop the avocado toast.
