Avocado Toast with Egg

A trendier breakfast, or even a brunch, will be the combo of avocado and egg on top, smashed on toasted bread. It sounds much healthier and finer, with really great balance-a delicious bundle full of healthy fats, protein, and fiber.

Avocado Toast with Egg Recipe:

Ingredients:

  • 1 ripe avocado 
  • 2 slices of bread (whole grain or of your choice) 
  • 2 eggs (fried, poached, or scrambled) 
  • Salt and pepper to taste 
  • Red pepper flakes (optional) 
  • Lemon juice (optional) 
  • Olive oil (optional) 
  • Fresh herbs like parsley or cilantro (optional) 
                                                                                    


Instructions: 
  • Toast the Bread: Begin with toasting your slices of bread either in a toaster or on a skillet until golden and crispy. 
  • Avocado Preparation: Cut the avocado in half and remove the pit. Scoop the flesh into a bowl and mash it with a fork. Sprinkle a pinch of salt, pepper, and a squeeze of lemon juice for added flavor. You can add olive oil for creaminess if you like. 
  • Cooking the Egg: Put a little oil or butter in a pan. Crack the eggs into the pan and cook to your liking: fried, scrambled, or poached. Season with salt and pepper. 
  • Assemble the Toast: Slather the mashed avocado thickly on the toasted bread. Put the cooked egg atop the avocado toast.
  • Optional Garnishes: Sprinkle with red pepper flakes, fresh herbs, or extra seasoning to taste. Serve and Enjoy!
